I've been here multiple times. The first was over a year ago for a dinner yelp event and the fish was the cleanest I've tasted in Vegas(at the time). I'm from Alaska so I'm just a liiiiiiiiiittle snobby about seafood. The experience and food was great. The fusion take on dishes were creative and well executed. I became a fan and so I returned. My second experience was just as good and Chef John even went the extra mile and introduced me to uni for the first time--on the house mind you! It was soft buttery and sweet as people always had told me uni was supposed to be. And then it went downhill from there. Couple more times I've tried to come back and either the wait was long or the host was extremely unorganized. Sometimes both. It's not good if both I and the employees are flustered. But the food had never wavered. My boyfriend insisted on trying this place with me since I had always talked so highly of it. We came for dinner, calling ahead, and trusted Chef John with omakase. I'll give credit for presentation, but unfortunately, both mine and my boyfriend's palette wasn't agreeing with any of the selection. It wasn't anyone's fault but I was really hopeful. There was an array from mackerel, scallops to tuna, but we weren't digging any of the flavors. With a couple bottles of hot sake the bill came to around $140. I don't mind coming back, but it's just not high on my radar anymore. Sorry Soho.
