  • i am a very picky eater.i found Carlos' Kitchen by purchasing an Amazon Local voucher. the food blew my mind.i have traveled all over and ate at many places from 5 star to hole in the walls. but, THIS restaurant , is a true gem in Las Vegas. i was a bit apprehensive upon pulling up to the strip mall and walking inside a bar to get to Carlos'. Chef Carlos was very kind and made me feel very comfortable and welcomed. he explained the specials and answered all my questions regarding the food prep and sauces that came with entrees. i am a huge chicken fingers with mild buffalo sauce fan. i have a weakness for well prepared fries and onion rings. i have tried so many eateries around the USA and worldwide; only a few places know how to make real french fries with a light batter and hand dip onion rings in beer batter to coat the onions evenly without making it soggy.i started with the pinto bean soup with tortilla slivers drizzled with sour cream. OMG... it was out of this world creamy, tangy,and all the warm feelings of comfort food. next, the chicken fingers with fries came out.i asked him to make the chicken extra wet with mild sauce and, WALLAH! it was perfect! the fries were the true test of his culinary knowledge. OMG...they were seasoned just right, so crispy you can hear it with first bite. the chicken fingers were thinly pounded and so juicy and tender. it is not dry and hard . on the contrary.. it was supple, mildly hot, and swimming in my favorite condiment: mild buffalo sauce! when i asked for extra ranch sauce for dipping, his daughter the server was happy to deliver. other places always tell me there is extra charge and watch me strangely as if no one ever asks for extra ranch ?! the onion rings are THE BEST i have ever had. trust me. i can't explain it. you just have to try it. it is lightly dipped in a beer batter but, not over fried. don't think too hard; just GO to Carlos'. he will take damn good care of your tummy!
