| - I feel like Soyo is very unassuming from its barstaurant feel. There's soju caps hanging here and there as decor and string lights from booth to booth. It's a very relaxed and fun environment.
I came here with a few friends in the late evening (~10:30-11pm) and got a few dishes to share. Everything we got was amazing. It was flavorful without being over seasoned/over-salted. We got the bossam, bulgogi in soup, korean fried chicken, korean pancake, and rice cakes w/ ramen. My favorite has to be the bossam. It's the best bossam I've had in Las Vegas so far, and I've been having dreams of it for at least the past 3 days. The ssamjang, garlic, kimchi, and mini shrimps really complimented the pork well without overpowering the pork. It was a match-made in heaven, and I feel like I'm fiending to get back here to eat it.
The Korean pancake was crisp on the edges and soft on the inside. It was everything that you could ask for in a toasty pancake, and portion sizing was so generous. It's something you definitely have to share with a few people.
The fried chicken was great in my opinion, but then again, I loved the sauce. I just couldn't get enough of it. The chicken is smothered in the sauce, so if you don't like a super saucy wing, then you might not have a good time with this one. If you're like me and like sauce though, then you'll probably die happy after these wings. You can taste some subtle garlic flavor underneath its tangy, sweet crunch.
The rice cakes were cooked to perfection. It wasn't overcooked internally and it was chewy without being sticky. The sauce wasn't too sweet which was great. I've had some overly sweet ddeokbokki sauce and it just completely ruined the dish, but not this one. There's a pack of ramen cooked right into it with some carrot & cabbage shreds. Oh so satisfying and delicious!
On the slight downside, the service was kind of slow. There were probably 5 tables there and about 3 employees working. Even then, the food came out pretty slow and it took a while for the waiters to come by to refill waters/etc.
Overall, the food is great to a point that I'm using every excuse I can to get my friends to come back with me. With so many great options and generous dishes, you definitely should come with a few people and share. That way, you can get a little of everything!
