  • Listen... I am always open to trying out any kind of Mexican spot that has a good happy hour okkaaayyy?! I have made it a mission to spot out any and every one of them that can be classified as decent for me and my co-workers to go and enjoy great food and drinks. Finding places that have happy hour available on Saturday's can be a challenge just because there are soooo many that only offer on the normal Monday-Friday time period. This past weekend my crew and I had the pleasure of heading over to the great Libre Mexican Cantina which is located inside of the Red Rock Hotel & Casino! I did some research on some of the places in my area that offered happy hour on Saturday's and come to find out I had actually already had this place bookmarked so why not right? When I arrived I was pleasantly surprised that there weren't very many people! This past weekend was super windy and slightly chilly but nothing crazy. I love places that offer patios to sit back and relax on while enjoying the drinks. When I arrived, I happened to be one of the first out of my group so I was told to pick actually anywhere out on the patio to sit and a serer would be right with me. The service here was actually really good and that always goes a long way in my book. A young lady greeted me and brought out my water just to start. Now at the time, they were offering a free house margarita with check-in so I also added that into the ordering rotation as i waited because were cutting happy hour kind of close . From my experience the check in margaritas at most places are either way too sweet or just not good at all since it is free. That was NOT the case with Libre! These margaritas were AMAZING and STRONG! YES! This is what I call a happy hour. Now it was time for ordering! The food is limited as far as the selection goes on the menu but literally everything we tried was delicious. We ordered damn near everything on the Happy Hour Menu: Guacamole: Cilantro, Sweet Onion, Jalapeno Chicken Nachos: Pickled Onions & Jalapenos, Arbol Sauce, Sour Cream Mexican Street Corn Fritters: Cotija Crème, Poblanos, Grilled Corn Cheese Quesadilla: Crispy Flour Tortilla, Mexican Cheese Blend Shrimp Ceviche: Kiwi, Lime Mojo, Crispy Plantine Once the rest of my crew showed up, they followed suit and checked in and requested their drinks as well. We ended up double up on drinks so at one point we had about 8 margaritas coming out. Our server changed again and we got a really nice guy who was training another server so at this point we didn't know who to tip lol. Everybody was great! We will make this one of our new favorite Happy Hour spots for SURE!
