  • I wanted to love Gaucho based on everything I've read. I didn't. I'll chalk it up to ordering the wrong thing - flank steak sandwich, requested rare and got meat I couldn't chew. I've grilled flank steak to rare many times (always marinated to break down muscle fibers), so it surprised me to get a piece of meat that was resistant to my teeth. I'll probably try Gaucho again as everything on other diners' plates looked good, but will stay away from the flank or skirt steak options.
