| - Before this summer, I didn't know that ramen was anything other than instant noodles. Then, my friends took me to Ippudo in NY (soooooo good) and I was hooked. So, when we heard Momofuku was opening here, we had to try it. It wasn't even close. Where was the milky, collagen-rich pork broth and the chewy noodles? Momofuku broth was generally bland and greasy (I've made better broth from internet instructions). I'm not looking for low-fat (I think proper tonkotsu has finely minced pork fat), but this broth was not right. And, too much meat. I liked the pork belly, but didn't need the pile of pork shoulder. Pork buns were good enough, but one can't go too wrong with pork belly so, I have to credit the pig, not the restaurant. Even then, I've had more flavourful sandwiches of this style. I found the staff to be friendly, but I don't think I'll be returning to Momofuku Noodle Bar. We're going to try Kinton next.
