| - Over the years that "Nova" has been in town, I have cheered for her, the self-taught baker, and for her company to succeed. I lobbied Harris-Teeter to carry her baked goods, and they did for a while, but finally decided on the frozen dough La Brea franchise. At this point, the coffee is the run-away winner at Nova's. This is good, but it's not why locals would want to support a local bakery. Their sweet items are decent, but they don't offer real baguettes. (https://en.wikipedia.org/wiki/Baguette) The batards they do offer are sealed in a knotted plastic bag which is of course death for the texture and crust. Their ovens are not hot enough and are not steamed so the crust and rich, beautiful complex browning is completely missing; the batards come out white with a bit of tan color. The instructions indicate warming in a 375 degree for 2-3 minutes. Oh, well. It was to be a bakery after all, not a coffee shop, but whatever works is OK. It *is* a great place for coffee.
