| - I'm really not sure where to start everything was so wonderful. We had the Taste of Quiessence and it was three courses of complex flavor built around simple local farm veggies and wines. The first course was smoked trout on a baguette with whipped herb creme fresh, dill, crisp capers, and red onion. It was so good I didn't get a picture before it was gone. The second course was a salad so fresh and complex I won't be able to adequately describe how delicious it was. The salad had a garlic purée, tempura oakra, poached tomatoes, zucchini purée, cucumbers, green beans, a tapenade, and at least one other flavor I'm forgetting. The main course was a chicken cutlet on a bed of couscous in a red sauce with poached tomatoes, creme fresh and lemon zest. Dessert was a delightful bread pudding with vanilla ice cream and a panna cotta with fruit and a sorbet. The wine pairings were interesting but not amazing. The service we received from Robert was top notch, he is so knowledgeable it really added to the experience. Overall it was a super fun experience and I'd recommend it to anyone looking for an organic fresh local sustainable choice.
