| - There's a reason people never complain when Grampa's Pizza tells them the wait for a table is 30 or 45 minutes: The reason is Gib's, just next door! When it first opened, a sandwich board on the sidewalk ("This house is a bar") was the only clue one had that Gib's was even a bar. And what a bar it is! No awful beer neon signs at the windows; just a unique beer selection inside. The decor is unique and tasteful, and there's seating both downstairs and upstairs. This is a place where you have to get a cocktail though; walk up to the counter and ask for a Yirgacheffe, one of the few drinks you can always expect to see there, since the cocktail menu changes over time. They're all unique; I remember having a great drink made with homemade strawberry ice cream that I was sorry to see go. But yirgacheffe, with bourbon, hints of coffee and grapefruit flavors, and an "iceberg" almost fitted to the glass, is a must-have. Maybe two yirgacheffes. If you walked there, three. A great place to take friends, or for a date, or a quick stop before or after Grampa's Pizza; the unassuming, elegant, creative Gib's is one of Madison's very best.
