I've been stuffing my face at this place since it had counter service only.
First off, it's small and family owned. Most of the time there is just the one guy making your sushi. Yeah, just one guy. At least I assume he is only one guy, because I see him behind the bar every time I come, day or night. He could be a series of clones, but I think he is just the hardest worker I've ever seen.
Don't come here expecting a conveyor belt of sushi workers churning shit out for your fat ass. Think of this as the kind of place you might stumble upon in actual Japan, where the owner makes sushi for you one order at a time.
They also use some kind of hulk version of sushi rice that is never mushy. Since rice is the most distinguishing part of sushi, because it's all pretty much the same otherwise, I enjoy it. Yes, I actually just spent time discussing some finer points of sushi rice. I'm not sure why men aren't falling over themselves to sleep with me. Is rice not a hot topic? Who doesn't love firm, yet supple rice?
