After three visits to CUT's Las Vegas location, I believe I have cracked the code to a perfect meal here. The following will cost between $250 to $300 for two people (not including drinks):
House bread: The pretzel bread is amazing among a plethora of choices. I love the butter as well.
Appetizers: Tuna tartare (the togarashi crisps have a kick); Maple glazed pork belly.
Main course: American Wagyu filet with mushrooms.
Sides: Mac and cheese and yukon gold potato puree have been my favorites. The tempura onion rings are also solid. As context, I have tried almost all of the sides.
Dessert: Banana cream pie came highly recommended. I thought it was fine.
Sides to avoid: Bone marrow flan, crab & shrimp "Louis" cocktail, soft polenta. In addition, I have felt indifferent to the white asparagus (seasonal).
Toppings to avoid: I love blue cheese, but it's an expensive and overpowering optional addition to the filet.
In light of my most recent meal here, CUT has emerged as my current favorite restaurant.
