I've made my way over to the Palace Station the last couple times I've been in Vegas to indulge at Oyster Bar. The combo pan roast is phenomenal and comes with a scoop of rice, which creates a perfect harmony with the roast. Think creamy seafood bisque. They ask you for a spice rating of 1-10 and I've gone with 4 as I like my roast on the milder side. There are only 18 seats at the bar, so I've heard that the wait can get pretty ridiculous (~2-3 hours), but if you head over at off meal times, it's not too bad (~30 mins). Again, I don't think the servers or cooks are rushing to get seats turned over, so that can add to the wait time. You can pay $5 (sharing fee) to split a pan roast with a friend if you don't think you can handle the serving portion.
Overall, a unique experience highlighted by the chefs preparing the pan roasts/gumbo in front of you at the bar.
