| - Leave it to Madison to have its own craft butcher shop. This place is so charming, with a curated selection of unique meats - from dry salamis, to steaks, and homemade sandwiches. I took my dad here, who loves delis and meat shops, and he was in paradise. It's clear that the staff at Underground Butcher are both knowledgeable/interested in meat and take pride in what they do - it shows in the way they interact with their customers and package the meats for customers.
My only criticism would be the prices. I'm all for local + high quality products, and am OK to pay a premium for that, but the prices at Underground Butcher definitely are on the highest end compared to any butcher shop I've been to. I visit a lot of European delis and find that the prices are at least half what I would pay at Underground Butcher, even for objectively great-quality meats.
Nonetheless, I think the idea of a high-end, craft butcher shop is cool, and Underground Butcher does at least somewhat justify their prices with unique flavors, exclusive products, and a great staff. I would definitely come here for a sandwich again or to get some meat for a special occasion, but not the type of place I could see as my go-to butcher shop given the prices...
