| - Holley's has a fairly decent product and their drinks are consistently made. If their service was up to par, it would be a great little shop, but I have found they fall short time and time again.
A coffee shop should run like a well oiled machine and Holley's seems to have too much going on for their staff to manage in a timely fashion. While I am really relaxed about wait times when there are long times, I do not think a customer should have to wait after an order is placed, and a coffee shop with all the right moving pieces should be able to accomplish this. I was a barista for 3 years and our shop was graded on how quickly we made drinks and personally pumped out 30-45 drinks per hour during the rush period with the support of staff around me. Again, well oiled machine. A few examples of their short comings:
1. My BF and I were the only customers, two people were working (that I saw). We each ordered a drink and a croissant sandwich. I watched the employee go back and forth to making the drinks, then sandwich station, back to drinks, back to sandwich, dump out the espresso shots because they were over extracted, finish the sandwich, finally make our drinks. While I would have been perfectly happy getting our drinks and sipping on them while we waited for our sandwiches, there seemed to be no protocol in how our items were made and it took much longer than I would have liked and I was left empty handed when I could have been either eating or drinking while waiting for my second item.
2. Again with my BF, we pulled up to the drive through, were acknowledged by making eye contact with an employee and, somehow, we were forgotten about. We knew *someone* would help us and we had the dog in the car, but we ended up waking a good 5+ minutes before someone came to the window to ask if we had ordered yet, as she had seen us but didn't see a drink order. She was surprised no one had helped us yet. Our drinks were brought quickly that time, but there was some breakdown in communication between the staff member who saw us and the one who eventually made it over to help us that was frankly unacceptable.
3. Lastly, I came in alone this morning. I left my house 10 minutes early (as I do when I go to starbucks before work) and put in my order. There seemed to be no set role for the employees that were making drinks, as one gentleman made two drinks before walking away from the bar, leaving no one to make drinks for at least 3 minutes. Finally, espresso drinks were made, mine was first up and was completed but not delivered until the following drink was made. I was incredibly disappointed with how the staff managed their time and after consistently seeing the disorganization of all their prep stations from pour over to espresso and food, I've decided I can't continue to come here when I am expected to be somewhere else.
In my opinion, Holley's could really be great if they made a few small tweaks in training or they moved to a more limited menu after morning hours when they have a smaller staff. I hope to see some changes and I will likely continue to go on slow mornings but I can't risk being late to another appointment.
