  • The day of my dinner reservation at APDC was not unlike the day of your first date with the guy you have been crushing on for months: stomach full of butterflies, palms sweaty from anticipation, expectations rampant, near delirium from starving yourself all day... I arrived fifteen minutes before my reservation and was seated at the bar - the only available seat in the house on a busy weekend night. It was prime real estate directly across the open kitchen with all its glorious chaos - young, black-clad cooks darting from one end to the other, waving hot pans and plates, yelling orders in French. It was such a great sight. And then the food came and it was time to get serious. First up was a crab and cucumber salad - a special for the day. The presentation was simple but nice: a bed of shaved cucumber bathed in a creamy dressing (that looked a bit like Hollandaise sauce), topped with a generous layer of crab meat, topped with a green garnish of some sort. The crunchiness of the cucumbers worked well with the tenderness of the crab meat, and as I bit into the salad, I was surprised to find fresh mint buried between the crab and cucumbers. Great layers of textures and tastes in this one. My second dish was the tart with cured foie gras. This one was interesting. A tart the size of a personal pizza, topped with a sharp cheese that had been toasted and left to harden a bit. Beneath the hardened cheese oozed a drizzle of reduced balsamic vinaigrette. And on top of it all, four slices of foie gras. Biting into the tart, there was the nice crunch from the flaky crust, the sharpness of the cheese, the tanginess of the balsamic vinaigrette, and the sweetness of the foie gras. Again, a weird blend of flavors but somehow it worked! This was delicious and really rich. For my third dish (and this was me absolutely indulging), I went for the homemade boudin. This was actually my favorite: light, fluffy mashed potatoes topped with fat pieces of boudin, garnished with cooked apples and sauteed cabbage and onions. The boudin melts in your mouth and there's some kind of magic that happens when you add the tender apples and the sweet cabbage and onions. Amazing. I would have liked to have gone for dessert, but I literally could not fit another bite of anything in my mouth. I didn't even finish the boudin (I took it home of course). This was a one-of-a-kind dining experience and an absolute must-do in Montreal. The service was also excellent. So yes, make a reservation and indulge!
