Was the 1hr wait in the cold and additional 1 hr kind wait to order worth it?
I don't know to be honest.
Maybe if you've never had an south american/Argentinian steak over a fire? I guess this place is a gem in terms of food diversity and culture in the area and is accessible by tourists on the strip as well. If I had my way, I'd honestly recommend going there on a less busy time for maybe lunch? We saw lines already starting at 5PM for dinner. Maybe a weekday instead of a weekend?
They make fresh chimichurri which was delicious. We got the NY strip steak large plate each which comes with a side salad and grilled bread which was delicious to dip in the array of sauces.
The steak was perfectly medium rare and they do cut your steak for you if you're not used to that.
We also got the roasted cauliflower as well. I think overall the food was fresh, perfectly grilled, and the ambiance reminds me of a family style modern farm house esq place with an almost cafeteria feel I also loved all the local art support. Be aware that it will be noisy so don't expect your intimidate atmosphere.
It is BYOB as well.
Overall not a bad experience but I honestly don't think it was worth the wait.
