Located in one of the many mini plazas, Monta is a very small place, fit for maybe 25 people max. Wait was about 15 minutes on Tuesday around 1pm. Make sure to put your name on the list. Service is nice, place is as clean as it could get. I ordered the Tonkotsu Shoyu Ramen without black mushrooms, bamboo shoots, and green onions, (basically just leave me with soup, noodles, and 2 slabs of meat). I don't want to waste ingredients so don't give it to me, save it for the next person haha.
Ramen took about 10 minutes and it's a pretty big bowl. I really liked the broth. It was thick and full of flavor. The meat was marinated well with not a lot of fat. The noodles were cooked well. Definitely will come back here for ramen if I'm ever in Vegas.
