"Yo gee yay" Not "yo jee" like I was previously pronouncing it.
This is better than the traditional Japanese Shabu Shabu because... Flavor.
Don't get me wrong, I get that you have to tweak the broth and dips to flavor up the meats and soup, but I like that Yojie offers an upgraded and more intense flavored broth with their Tonkotsu option. Their Tonkotsu broth is richer and has a nice fuller flavor than the other broth options.
Besides the broth, I really enjoyed their signature beef option. It was tender but also added more depth to the broth. The vegetables that come with are plentiful, and service is attentive. If you like spicy, ask for their hot stuff - you only need a dab to turn on the heat.
I look forward to their expansion and hope they come to the Southwest!
