| - This might sound bizarre, but in the beginning of October I agreed to participate in a "7-day Rescue" during which I agreed to eat only plant-based whole foods prepared with no oil. The point of the rescue was to see if you can really achieve significant positive health results in as little as 7 days. (spoiler alert: you can!). Rip Esselstyn (of Engine 2 fame- google his Ted Talk if you want the quick low-down on this lifestyle) came to my company and kicked off the event. We got an advanced copy of his new book (aptly titled "7-day rescue"). It includes recipes and shopping lists, and loads of tips and tricks for finding success in this lifestyle. You might notice I'm not calling it a diet, because it really isn't. It's supposed to be a lifestyle change that sustains long term. It isn't supposed to be a quick way to lose a few pounds. (Although losing pounds is definitely a side effect! More on that & my other results in a min).
So for this eating plan, foods need to not be processed (whole foods) and you should eat largely a plant-based diet. You want to avoid oils, and focus on drinking only water for the week. It was tough, but I did it! And Whole Foods helped me in a major way. Many of the off the shelf foods at Whole Foods meet the criteria of this lifestyle, so it was a nice one-stop shop for me. Also, the workers there are familiar with this way of eating, so they pointed me to some really cool products that I hadn't even considered (Rip's Engine 2 pizza crust being one- it was insanely tasty!). The layout of the store is great- it's super organized and tidy. The aisles are wide, the lighting is bright, and everything smells amazing! I went early on a Sunday morning, so the bar wasn't open yet, nor was the little cafe. But the menu was posted and it looked great.
The only negative is that Whole Foods prices are on the high side, but that probably isn't a news flash if you've read any other reviews. But for me, it was totally worth it not to have to run around to a bunch of other places to get the foods I needed for this week rescue.
So you might be curious about my overall results. I am excited to tell you that in regards to my fasting blood sugar, I am down 1 point. Total cholesterol, I am down 13 points. LDL was too low to register! I'll take that as a good thing :) HDL is down 4 points. My triglycerides are down twelve points, and I lost FIVE pounds. These results are just from one week! I am SUPER happy with these results and even happier that my husband ate plant strong with me almost the entire week, too :) Whole Foods definitely made this 7-day rescue experience a good one, and I'll be going back to shop there again for sure!
