I've been hiking the summit trail since I was a kid. It's a nice hike because you get a pretty good cardio work out in a short amount of time. The trail is about 1.2 miles with a 1200 ft elevation gain (the mountain itself is around 2500 ft). The second part of the hike is the hardest as there are lots of elevated switchbacks just before reaching the top. But once you get to the top, you get several beautiful views of the Phoenix area from all different angles. All the major suburbs can be seen. The peak itself isn't very spacious and can get a little crowded on busy days. This is a pretty popular hike and you'll see some of the regulars running up and down it several times in a day. I suggest doing a night hike as Squaw Peak (I still call it that) is open pretty late into the evening. Sadly many out-of-town folks underestimate the heat we have here and don't bring enough water. I personally go through quite a bit of water when hiking it. There are two lots you can park in and there is usually plenty of space.
