We had the tasting menu. It was not memorable. Not that it was that bad, but it was just very plain without any excitement. One can do so much better in Vegas.
We started with a Kushi oyster amuse bouche that was too vinegary, followed by a good hamachi dish. Then came gnocchi that was as bland as can be. The turbot was way oversalted and overcooked. The pork loin that the server raved about was small, tough, and tasteless. The blood orange sorbet was too sweet but the bread pudding-like dessert was good.
The service was cold, yet efficient.
There are so many good restaurants in Vegas, Sage should just close up shop and return to Chicago.
