We had tried this restaurant when it opened and were disappointed in the quality of food and service. We decided to give it another try last night. Our server, Taylor, was pleasant and attentive. The food, however, was disappointing. The bread was dry and tasted stale. The minestrone soup tasted like watered -down pasta sauce with some shells and undercooked vegetables. The wedge of potato in it was almost raw. The entree was no better. The eggplant parm consisted of slices of flavorless eggplant topped with a slab of mozzarella. The accompanying pasta was perfectly cooked but served with a very sweet tomato sauce. The penne with chicken was just as bland. The server brought more chicken later because the kitchen had failed to put enough on when it was prepared. The best thing we ate was the cannoli which was fresh and delicious. However, it was not enough to give us reason to return to Vito's
