The chef here comes from a well-known restaurant on the strip.
This is my favorite sushi restaurant in the US.
The food is excellent. The chef does a "special sushi" plate; a slightly different take on the usual toppings for nigiri style sushi. One is a red wine reduction sauce, another uses paper-thin slices of jalapeno. If you ask, he will likely do servings of "traditional vs original" pieces of nigiri.
They also have a number of great sake options.
Get the live amaebi, if they have it, and try the house-made red-bean ice cream.
