I ordered some ribs and mac and cheese for takeout. When I got home with the food I discovered to my dismay that I didn't get any sauce. Now I know that it's partially my fault, because I didn't ask for some, but every other time that I've gotten BBQ I've been asked what kind of sauce I want. I guess I was just assuming that there would be their sauces in the bag. Anyway, the ribs themselves had a good texture and the meat was sufficiently falling off the bone. But the flavor was bad. Way too much smoke, and not the right smoke. The black skin on the ribs tasted like lighter fluid, and it had an acrid flavor that permeated throughout the meat. And I don't even think that's me being a wimp. I like smoked meats and cheeses of all kinds. This tasted like flat out wrong; my brain was telling me not to eat it. It literally tasted like the charcoal that I use in my grill. I put down the ribs with a sigh and sampled the mac and cheese. This dish was much better. Good texture and consistency and was sufficiently cheesy. I probably won't be getting Union Pig again, based on the flavor of their meat. Plus, at least when I order from Yinzburgh or Pittsburgh BBQ Company or South Side barbecue I know they'll offer me some sauce, because my dumb ass is too forgetful to ask for it.
