OK so here's the thing. I've been all over Italy for business and pleasure. What we have here (Pane e Vino) is train station food in a modern looking pricey establishment. I've had the pleasure of eating there (Pane e Vino) twice and will not be returning. At least at the train station (Milano, Torino, Rome) they slice the prosciutto di parma & galbani provo at the time making your panino. Here, I found the bread wasn't fresh from the same day and the meat wasn't saporito enough for what is being presented and the accompanying price. They're not even slicing the meat appropriately thus compounding the poor lack of freshness.
If they're going to be successful in this space, which involves very simple Italian recipes, focusing on authentic and "FRESH" cuisine, they'll need to stop cutting corners and start serving food at the same quality like the Italian train stations, which by far don't present as fancy as Pane Vino.
