I've recently moved to Vegas, and live very close to the Red Rock Casino. I have been to this buffet for about 4 times last week, overall, not impressed.
Yes, it is cheap and close by, but the food quality is pretty low. Sushi is inedible (if you've ever had ok sushi), a lot of breakfast dishes were very cold, asian station is way too greasy. I mean, it's ok for what you pay for, but I think the buffet at Palms for the same price is a lot better.
The only thing I enjoyed was their bakery/desert station. I like they have a big variety of low sugar/ sugar free items. The banana cream pie was tasty.
