Rollins has a great little Mexican take-out section. A very enthusiastic & friendly lady named Mayra does all the cooking of small-batch recipes from Guerrero in southwestern Mexico - essentially homemade delicacies. We had such fun discussing the various dishes, of which she was justly proud! There's a wide selection of daily-changing dishes: cocido (beef & vegetable soup); chunky pork in chile sauce; guisados (stews); pork ribs; deep fried tilapia, chicken, & chicharron; carne asada; tamales; beans & rice; red, green, & molcajete salsas; & many other attractive options. On two visits, I grabbed a portion of thick, crispy tilapia w/ salsa for a tasty parking lot snack. It was delicious, bringing back memories of P. PeƱasco - I only forgot to add lime on both occasions! It just doesn't get any more authentic than this - with either the food or the chef!
