  • We received a 5 course wine pairing dinner as a gift, which we attended last night. It was really good! Chef Pascal was very energetic and informative and obviously passionate about food and wine. Chef would explain eeach food course as it was about to be served and then they had a sommelier named Christine explain the wines. I will say that, though the som seemed to know a lot about wine, her public speaking skills were lacking. She was tentative, and relied heavily on her ipad for information. I mean, she only had 5 wines to explain, and anyone who was already a wine expert should have been able to spend a half hour beforehand memorizing the basic details of each winery and wine, and then be able to speak at length of the cuff about them without going into a semi panic every time her ipad went to sleep during her talk. Either she is new at speaking publicly about wine or she just has very few public speaking skills. As a professional communicator and public speaking/presentation coach, she could use a few hours of instruction to bring her game up to at least be in the same ball park as Chef Pascal. He was excellent and very energetic and confident; the contrast was startling. Her weakness in public speaking likely undermined a vast knowledge of the world of wine, which is doing all her study on this topic a disservice. She was nice enough, but I felt a few mins on Google and I would have come away with just as much information. The meal was excellent: tuna carpaccio paired with a German Riesling, seared salmon with a pinot gris from Oregon, coq-au-vin with another Oregon pinot noir, petit filet mignon with an Argentinian crios and a wonderful chocolate terrine served with a sweet red which escapes me. The meal was served very efficiently by the cooking school staff in the main front room which had their camera laden cooking stations for their other classes. Chef Pascal also educated us on how chocolate is made, the dangers of preservatives and the poison that we consume in the form of food colorings. A sobering but very interesting education which gives one food for thought on what types of foods we feed ourselves and our loved ones. In all it was a very pleasant evening. They offer many different cooking classes for adults and kids with a very wide array of class options and skill levels. I am considering taking some of their classes as I know I have been handling my knife all wrong and would love to learn to chop, slice and julienne like a pro. Merci!
