I tried one with an amazing coconut ice cream that had crunchy shreds in every bite. Personally I prefer the eggy chewiness of a soft waffle, so I ordered mine soft, but you could opt for it totally crisped too.

Bakerbots is a super cute shop. I was looking for a pre-dinner dessert (as on hot days out I am wont to do), and they did not disappoint.
Those with a penchant for having eyes bigger than their stomach are well advised to go with the half ice cream sandwich, which is about 1.5 inches of rich, real cream, real egg ice cream squished between two halves of a big sugar cookie like an Arctic seal in a Medivac. Those with stretchy pants on may consider the full ice cream sandwich.
It comes in delicious DIY combinations. My ginger molasses cookie paired well with the cinnamon ice cream, albeit I would have preferred a spicier ice cream and a less sweet cookie. The ice cream did have a touch of black pepper, however, which was an inspired addition.
I just learned the ice cream isn't made at Bakerbots though (although it is from another local supplier), so I give this place 4/5 plus a strong B-bot stance.
