Seriously, I don't understand how the chef got onto the cover of the 'Madison' magazine. That magazine just lost credibility in my opinion. I'm not saying that I know everything about noodles and dumplings, but having lived in an Asian country (Korea) and eating my fair share of noodles and dumplings in others locations around the world, I have to say this place has one of the saltiest ramen I have ever eaten in my life. The salty taste of the broth was just too overwhelming that I couldn't appreciate the flavors I would expect from ramen.
The waitstaff, drinks, and environment are very pleasant and should get high marks for that but their most important focus should be on their food in which they fail to do.
