  • Hungry for a slice of pizza, I made my way to Tempe Marketplace to go to Slices. I found that it had closed, and this "Axxio" pizza had taken its place. Everything looks identical to the old Slices--if you didn't notice the new signs, you wouldn't know that it changed ownership. I gave it a try, but I quickly saw that the Axxio people are a bit confused about how they go about making their pizzas. The usual method of making a pizza involves assembling the cheese, sauce, and toppings before it's baked. That allows the toppings to cook in the oven along with the rest of the pizza. The "by the slice" way is a technique used by many places that sell individual slices--they cook basic cheese pizzas, then when you order your slice, they top it and reheat it in the oven. It is more economical than cooking whole pre-topped pies and hoping that you'll sell them all. One of the things I liked about Slices was that they actually cooked most of their pies the traditional way, topping them before baking. (Even though they do re-heat them when you order.) However, Axxio uses the bake-then-top method, which left the toppings very undercooked (and in some cases, not even warmed through.) The biggest puzzle for me (and if Axxio reads this, take note) is that they will bake a cheese pizza, then top the entire thing after it comes out of the oven. For example, I watched as the took a cheese pizza out of the oven, then topped the whole thing with uncooked pepperoni. If you're going to top the whole pizza, then do it before you bake it! There is no need to use the inferior method that you do. But as of now, two stars it is. The pizza was dried out, and the toppings were undercooked.
