| - The staff here were pretentious and snobby, yet possessed approximately as much menu knowledge and understanding of cuisine as a kindergartener. The waiter gave me a hard time over requesting tap water, mentioning that, having lived in Vegas all his life, he would "never drink tap water". (Really? The water in Aria is polluted?) Trying to embarrass me into bottled water in front of my date was a poor way to start the evening. The Kusshi oysters put me in a better mood - nice spicy hit of boozy goodness on the tongue, very fresh tasting, went down easy. Left me wanting more. The Chilled Corn Soup with lobster and lemongrass sounded like a great idea, but went over like - well, cold soup. It didn't work somehow, the mouth feel was off. Imagine that you took some decent seafood soup home from a restaurant, put it in the fridge overnight and then ate it without re-heating. Then, when you realized it was low on flavour you hit it with salt - lots and lots of salt. The Wagyu Hanger Steak was out-shined by the chimichurri and crispy potatoes, which were quite nice, whereas the meat itself was blue rare (I ordered medium rare) not properly seared and obliterated with salt. Dinner for two ended up at around $300 plus tip and the poor service from snotty brats made for a Vegas memory I would rather forget.
