| - Their menu has been expanded to more than just Taiwanese items and hot pot. Now they're also serving pho (which has been there for a while) and ramen. I assume they are striving toward imitating the more native Vietnamese and Japanese styles, respectively. Our experience with the tonkotsu ramen was so-so. The composition was pretty spot-on, with a good amount of broth, soft noodles, and toppings of chashu, egg, seaweed, wood ear, bamboo, fish cake, and scallion. The taste left something else to be desired though. First was that the broth did not feel like tonkotsu at all--rather than white, creamy, savory, and meaty, it was more like plain soy sauce base, or shoyu. The second issue was that the seaweed and fish cake had overpowering flavors, despite being a smaller presence in the bowl. On the bright side, the chashu was quite tender and tasty, and there was a lot of it.
