I am a loyal customer at the farmers market and my family loves the fish we get from APS. But yesterday I headed to the shop on Indian School, which is pretty far for us, to get fish for dinner. We were hosting a work event at our home. They had fresh, never frozen, salmon that had been caught the day before and overnighted. WOW it was great - beyond great. I served some pretty large pieces (I actually thought I should have cut them but they were so beautiful I did not). My guests ate every bite. Because the fish was so fresh, I went simple on the prep: brushed the fish with olive oil, sprinkled it with salt and pepper (with a tiny amount of sugar added to help the skin crisp). Grilled it. Served with lemon and a tarragon/orange zest/butter sauce - which no one used because the fish was perfect on its own. Everyone raved about the meal because the fish was so good.
