| - I am such a sucker for carbs. Everywhere I go, bakeries are within my radar. My research wouldn't be more easier without Yelp, and it has pointed out to me cool bakers in the city whom I know there leave no chance of not visiting.
This artisanal bakery has been in business since 1956, founded by the Etienne Family, 18 bakeries across the largest city of Quebec - Montreal.
And so it has to be bookmarked and trot to when I wander around Saint Laurent Boulevard, one of the longest street in Montreal, nicknamed "The Main"; 11.25km.
I spotted the boulangerie as I draw near and pop right in. It was fairly quiet with only 1 customer in the background. I reasoned that it was mid day and so logically the crowd was not in sight. I browsed the glass cabinet, studying the mouth watering in the display. I know the plain croissant is my short listed. But my greedy nature refused to stop at one. And so, I asked the friendly lady to point to me her favourite. Straight away, she suggested I get the almond croissant which is apparently the best seller in the shop. I did.
Amazing. She didn't lie. I had the most memorable pastry here. The croissant exterior was so crusty but magnified by its pillowy interior. Very very rich and sweet in nature, I am surprised by the almond filling stuffed in between. Often, almond croissant is simply butter pastry topped with almond flakes but this one doesn't come with any flakes but filling! It was my first and that was why it seems alien to me when they called it almond but without its flakes!? The mystery was solved only when I took a bite. The filling weren't sweet but very moist. The nutty flavour didn't appear very strong probably due to the rich buttery taste in the pastry. Though it was baked flat and slightly "burnt" but the structure is very brittle. U may feel somewhat heavy but I could tolerate it well, no problem. Fabulous!
Then the croissant was also well executed. The exterior is crisp with visible laminated layers piling up as shell. One bite, and u could audibly hear the crunching note ringing in your ear. Yes, slightly heavier than a regular French version like Maison Kayser and slightly greasier when u squashed part of its body. I just love it's aromatic butter perfuming the air in the bakery, it's impossible not to get one when u are there. Try them, the real French bread, they claimed, u judge.
