| - This review is long overdue as this restaurant has continued to put out extraordinary dining experiences that leave diners in awe when they remember how good the food, service, ambiance and overall meal was. Usually a restaurant will hit a home run in one or two of the categories but to knock it out of the park throughout each facet is very rare. Our meal started with the Aqua Knox Plateau. Lobster, oysters, prawns, mussels, ceviche, king crab and ponzu oyster shooters. If i posted the picture, i think it would be the only picture needed to have you stop what you were doing and book immediately. Too much to say as each item could have it's own paragraph. To say the least, everything on the platter was fresh, ice cold, delicious and appetizing. We were then treated with the King Salmon Tartare and Warm Octopus Carpaccio. Both home runs. Then we moved onto sharing the Butterfish, Whole Sea Bass and Fennel seared Albacore. They didn't last long on the table. One of the most important facets of our dining experience is the wine pairing and our server was one of the most knowledgeable service staff we have had in a while. I let him order the wine for us and didn't regret a single taste. It's very rare in this trying economy to find a restaurant with service staff that take that amount of pride in cultivating their own palate to ensure a smooth and wonderful experience for the customer, just have to save kudos to that. This server could have easily been the AGM and see a very bright future in his culinary career. Our meal finished with a dual dessert of cheesecake and flan and both were spectacular. I would go back to Aqua Knox in a heart beat and can't wait to experience a meal of this caliber in the near future.
