Ate here while staying as a guest at the resort. IMHO, Sangria's is part of a resort and should be judged accordingly. Resort restaurants customarily play second fiddle to the overall parent (resort)...they're not trying to earn any Michelin stars.
Surprised by some of the harsh reviews (part of the angry 1-star Yelp brigade?). Thought the food was decent. Had the pretzel bites with grain mustard sauce and the jalapeno smoked wings. Turkey club for me and BLAT (BLT with avocado) for the better half. The apps slightly outperformed the entrees, but still happy overall. Generous size on the drinks. Red sangria came filled to the brim. A good deal at $8.
Other notes: the place (and overall resort) is pretty classy, thoughtfully decorated in old world Italy theme. Comfortable, spacious. Clean bathrooms. A few big TV's to watch the game. Pool tables. Service was very good (we were one of just a few couples on a quiet Sunday night, so can't comment on what effect a big conference/full hotel might have on the service).
Come: if you're staying at The Scottsdale Resort (or one of the resorts down the street and want another option); if you're happy with pub fare (that's been a little classed up); if want a place to chill, watch the game, shoot some pool.
Don't come: if you're inner foodie is a little cranky and demanding food that makes you want to Yelp you're little heart out/ play food critic for the day.
