I came to APDC with an open mind and wallet. I wanted to experience an extremely decadent Quebecois meal. I didn't eat very much the day of. But, I did order fries as a starter. That's a terrible choice. The portions are massive, even from a usually undefeatable appetite as mine. It wasn't the size of the meal (though it was monstrous) as much as the density of the entree that made the mere thought of consuming it repulsive.
Foie Cromesquis- I was unimpressed. The exterior was similar to the fried brading on a mozzarella stick. No special flavors to speak of. The inside of this bite-sized app I was hoping would really capture the essence of foie. It did not. The filling tasted mainly like french onion soup with a faint taste of foie. The texture was not particularly rich or decadent at all.
Fries- Also unimpressed. I was expecting rich duck fatty deliciousness. Their fries are pretty standard style. Think boardwalk style: deep fried with the skins still on, just slightly thinner. They were OK, but the entire time I was thinking that I could and have made fries of better quality. Nothing special.
Stuffed Au Pied de Cochon with Foie Gras-
A ridiculously dense gut bomb of pork fattyness served over mashed potatoes with a porky demi-glaze with notes of red wine maybe. The dish was way too much food for me. But I'm fine with that. No harm there.
This dish was offensive to my pallete. It literally had large pieces of pork fat and skin in it. The sauce was so dense I wanted to vomit. The flavor profile was so dominated by the taste of fat that I felt like I was spooning up an oil spill. I'd like to see some balance to this dish with acids.
The execution of the pork itself was also questionable. The mouthfeel was OK, but it wasn't falling off the bone and flaky like some of the better pork tenderloin, shoulder, and ribs I've enjoyed elsewhere.
The Foie Gras was fairly mediocre. Really did not have the same butteriness or depth of flavor that I experienced the night before from Chef Sakurai at Toroli.
The service at APDC was excellent and all the staff were friendly and attentive. It was a fun environment with hip music and smiling people.
I'll probably come back at some point to give a few of the other dishes of Au Pied a try. But I won't expect as much as I did this time.
