  • Quantum is a nerdy/sciencey/BillNyewisheshewasthiscool distillery in Carnegie that has just started operations. They are "harnessing the potential of science and technology to reinvent the way spirits are made." (completely stole that from their website) On first look, the outside is pretty basic, no fanfare except for the Quantum logo on the door, but this may change as they ramp up operations. When you step inside you are greeted with a very pleasing aesthetic mix of industrial trés-chic meets mad scientist. Everyone behind the bar is super friendly, and they were giving tours of the entire operation to most of the people that were coming in. Interesting facts I learned: 1. This is the old location of a bakery that used to proof dough on the top floor and cook it in the basement (or maybe vise versa, I had a cocktail before the tour...). 2. They make all of the liquor in house, which apparently not all distilleries do (who woulda thought?) 3. There is a lot of science that goes into distilling. They even have their names on their lab coats... Super official science-ing happens when you have your name on a lab coat...Duh. On the day I was there, they were serving two signature cocktails (mixed in beakers and Erlenmeyer flasks): Schrödinger's cat: Quantum Rye Vodka, sparkling cider, and orange. This drink was like grandma's on Christmas morning, all it was missing was a gingerbread cooking and a hug. I would seriously give this on a 10/10 this was AMAZING! Galactic Mule: Quantum Rye Vodka, ginger beer, lime. This classic mule uses a very spicy ginger beer to give it a little extra zip. I really love mules (they are usually my cocktail of choice). For a standard no frills mule, this gets a 9.5/10, as in I have only had one that was better... Ever. Nice work! I can not wait for Quantum to finish distilling other spirits and expand on their menu. I will definitely be back in the upcoming weeks to see what else they come up with! LOVE THIS PLACE! Go. See. Drink.
