  • I ate here while in town for a conference. The prices are what you'd expect for a hotel restaurant on the strip, burgers around $15-$20. I was blown away by my burger, the Gold Standard, which had aged everything, including dry aged sirloin beef, aged goat cheese and bacon. The subtle flavors of the tomato confit, arugula and garlic-chive aoili all shone through to compliment this. These guys also cooked my burger truly medium rare, exactly as I wanted it cooked. The fries were hot and crispy. No complaints whatsoever on the food. My buddy had the Captain Hook, a salmon filet with smoked salmon on top and other savory flavors. He loved it, and the sweet potato fries were also crispy. Holsteins gets points off for a couple things, both beer-related. We had a waiter in training. With of our waiters were friendly and kind. However, the experienced server didn't know any of the beers on their rotating tap list (6 breweries) and didn't offer to find out when I questioned her. Instead, she pointed to their standard tappers and directed me to a dark beer, my stated preference. If you're going to feature something like 40 different bottled beers, you should know what's on tap, too. This goes double if you're training someone. I ended up ordering a Left Hand Porter which came to me warm. Like room temp warm. I know this is how it's served abroad, but even the bottle says "keep refrigerated". I didn't say anything since we needed to get back to our conference. I'd say Holsteins gets 4 stars if their staff can stay on top of their beer selection and service. Eat the grub! I might give them another try soon for a boozy shake.
