I don't get the hype. The meat is decent, and they have a big selection, but their butchers either are super lazy or don't know what they're doing. Last week they wouldn't grind me ground beef the way I want it in terms of fat and what type (chuck, brisket, etc). The result was sorta dry burgers. I've cooked a lot of hamburgers and when getting a good blend and not lean, they are amazing. I've never had a butcher say they won't grind other stuff for me. Literally every butcher does this. And then today, they apparently couldn't cut spare ribs into St Louis cut (cutting off the tips) because I'd have to ask them on Tuesday, so their meat cutter can do it Wednesday, the only day he's in. Are you serious? None of these guys behind the counter dressed as butchers can cut the tips off of spare ribs? These guys are a joke. So pretentious about their decent, expensive meat.
Go to Gasparo's or Strickland's where they have real butchers, great meat and reasonable prices.
