  • Location - Corner lot in downtown Scottsdale. Reservations - Highly recommended. Place was extremely busy when we arrived at 8:30 and even after we finished dinner. Parking - Structure, street or valet nearby. Service - Good and friendly Decor/Ambiance - Cowboyish (not a word but you get my drift), dark, wood. Price - Not extravagant, but pricey. Worth it since you probably won't try fusions like this anywhere. Food - Don't eat here if you are picky. The fusions/flavors are very unique. 1. Mini Mushroom Pan Fry- Good amount for 3 to 4 people as an appetizer. Quite rich. I wouldn't call it exceptional like other Yelpers but definitely good to at least try once. Huge variety of mushrooms (although it seemed like mainly button mushrooms or something very similar) sauteed in a rich tomato cream sauce over grilled polenta triangles. 2. Stetson Chopped - I yelped this place before trying. However, I could not find a real description of what this salad was. Now I know why. It's sooooo unique and the texture is unlike anything you've tried. It's one of those dishes, you have to try to truly understand. Most people would describe it as "very different but good." Even the menu doesn't describe the ingredients. Server brings it out with the ingredients perfectly lined. a) Bruschetta tomato compote minus the bread of course, b) Dried kernels of corn, c) Pumpkin seed trail mix, d) Chopped spinach I think, e) Couscous, and f) Cured wild salmon, similar to lox. Then the server mixes it with a mild dressing that is similar to ranch. The end result, a wildly unique texture of crunchy flavors with the occassional taste of cured fish. You have to try it to know what I'm talking about it. 3. Stuffed Pork Rib Chop - Disappointing. It sounded sooooooooo good on paper and via other Yelpers. The pork chop was slightly dry although my friend and I ordered ours medium. The blue cheese stuffing was really overpowering. The ancho bread pudding was weird tasting and a bit too mushy. The raisin/fig compote was a bit sweet and a good contrast at first to the strong blue cheese, but then tasted really weird after a while. The flavors didn't mesh well to me. I felt that every flavor was too drastically strong and were all competing against each other. 4. Espresso-Rubbed Filet Mignon - Highly recommended. You couldn't taste the espresso but it provided a rich earthy taste to the meat. The meat was nicely salted and very tender. No one cared for the bright yellow chipotle aioli which was just creamy but had added no other taste to the meat. The glaze was good as were the potatoes. 5. Bacon/Chocolate Chip Cookies - Everyone was stuffed so I didn't order the blue cheese cheesecake with black pepper ice cream. I really wanted to try it! However, the cookie was good. We were a bit timid, but all agreed that it was better than it sounded. A bit of salty and sweet. The bacon is cooked first and then added to the cookie dough along with bacon grease. Therefore, you could taste the bacon note but then you are left with a chocolate finish. Quite delicious. I would definitely come back here though, if only for the Stetson salad. The fushion of ingredients are truly unique and I have to give the chef two thumbs up for trying to blend flavors that you don't ordinarily pair together.
