The Meat Shop is the only place I have found in the Phoenix area that sells guanciale. Guanciale is cured pork jowl traditionally used in Roman style pasta carbonara. I got it for $7.25 per pound. One piece is roughly 3/4 pound, which is good for about 8 servings of carbonara. If you want to make authentic carbonara with quality guanciale you have to check out The Meat Shop. I will be back for sure. Their sausage and other meat products look great!
