  • First let me say that I've spent quite a bit of time in China and used to speak fluent Mandarin. I've had both really good and really terrible Chinese food; I've had both very traditional and extremely innovative Chinese cuisine--all in China. I went to the Tempe location and ordered Mongolian beef and asked them to add a few mixed vegetables--zucchini, broccoli, pea pods, whatever--because I like vegetables and they're good for you. "I'm happy to pay extra," I said. I do this at Chinese restaurants all the time and it's very rarely a problem--no one bats an eye. But at this place, some woman bustles out of the kitchen and starts lecturing me on how customers cannot expect the kitchen to change their recipe. "I'm not asking you to change your recipe," I said. "Leave the sauce exactly as it is. I'm just asking you to toss a few extra vegetables into the wok and heat them through before you put everything on a plate." "But that's not traditional!" she said. "So what?" I said. "Mongolian beef has peppers in it, and they're indigenous to the Americas, not Asia. So someone in China deviated from tradition at some point for this dish to even exist." "It will ruin the taste!" she insisted. "You're telling me that it will ruin the taste of the whole dish if you toss a few vegetables into the wok for a couple of minutes? It's not like broccoli disintegrates that easily." "If you want Chinese food that isn't authentic, you should go somewhere else," she said. "We serve authentic Chinese food here." "Next time, I certainly will," I said. "But can you just throw some damn vegetables in there this time anyway, like I asked?" So I got the vegetables I wanted. And the dish was tasty. But next time, I will take the cook's advice and go somewhere else. Because I don't need to be bullied into eating food prepared any way but the way I want it. Food constantly evolves and it's simply not too much to ask of a restaurant that they make easy alterations to suit a customer's preferences, especially when the customer is willing to pay.
