I have been on a gluten free diet for a few years now. It makes it difficult to get great pizza. However in Las Vegas I am lucky to have more than a handful of choices. Many places buy the gluten free crust from a supplier, this is not the case at Settebello.
It used to be that you would need to call 24 hours in advance to get their gluten free pizzas, but that policy changed about 2 months ago, so you can now get it anytime.
Everyone in our party enjoyed our pizzas and appetizers and the service was excellent. I believe them that the crust was made in house and cooked very quickly and very hot. It was by far the best gluten-free crust I've ever had anywhere in the U.S. I had mine with Buffalo Mozzarella and it was great! I will be back to try more.
