This Isn't necessarily the place to go for authentic Mexican food. What is nice about Chipotle is like a few other restaurants, you really get the option to control your portion size and what goes in your food. They vegetarian as well as vegan options. The only downside to this particular location is parking can be tricky sometimes so be forewarned before you go.
Your first option consist of burrito, burrito bowl, tacos or a salad. You then can choose between brown and white rice, black or pinto beans and your choice of meat or tofu. If you choose to skip the meat/tofu altogether you will get free guac.
You'll then get to choose between three salsas (I always get the pick de gallo with one of the other two). Finally you can get your finishes touching that include cheese, sour cream and guac. Overall I would say that chipotle, while not an authentic option, is a "healthier" option for Mexican food.
