Ramen KoBo (Translated to Ramen Factory) is a new ramen shop that recently opened in the Southwest of Vegas near Ikea. Ramen Kobo being owned by Mon Restaurant Group, I had expected a higher quality considering their other successful shops like Monta and Monzo.
Ramen Kobo is a small shop with mainly bar seating to overlook their open kitchen, then 5-6 tables along the wall. Servers were extremely attentive but there was one cook in particular who looked pissed off and didn't want to be there. I would look up and see him giving me an ice-cold glare and I had noticed he was eavesdropping to our conversation the entire time which I did not feel comfortable. My personal suggestion is to avoid their bar seating.
I got to try their tonkotsu ramen and veggie ramen. Both were subpar in my opinion. Ramen were on the al dente side.
Tonkotsu: Extremely light, flavorless broth. If you took a sip of their broth blindfolded, you might guess that their broth is hot water with salt. Chashu was just one paper-thin slice of fat with no meat on it. Bean sprouts were under-cooked and made me feel icky. 2/5
Veggie: Broth was still bland but better than tonkotsu. Two slices of fried tofu to substitute the chashu but these tofu will make you feel like you are biting into a dish washing sponge. I would still recommend veggie ramen over tonkotsu. 2.5/5
Overall a very disappointing experience. They just opened so I'm sure they are still working out their kinks but I don't see myself coming back here again.
