  • On the recommendation of a friend (thanks, Craig!) Mr. J and I had to check this place out. I've had store bought kombucha and it's definitely an acquired taste. Red Star Kombucha is located inside the former Pig Hill Cafe in Troy Hill and is a small start-up with free kombucha tastings and growlers/6-packs for purchase. Only one flavor was on tap for tasting - the green tea - and it was delicious! The flavor was very light, midly tart with a touch of sweetness. A very neutral flavor that could be easily mixed with beer or mixer of choice - or perfect alone. We also were able to sample the peppermint - which had a light herbal peppermint flavor from an unsweetened peppermint tea. You can see the kombucha fermenting right in front of you as there are large glass barrels lined along the wall. The ginger should be ready for purchase in a few more weeks, so I will definitely be back to try that one! I walked out with a 6-pack of the green tea. Yum!
