After seeing that the Underground Butcher won Best of Madison 2016 for its category, I had to go check it out. Previously, I had only gone to Conscious Carnivore, so I was excited to see what the Underground Butcher was like.
I loved the layout of the store. They have both meats and cheese, as well as wines and beers and anything else that may complement your meat or cheese.
There's a recipe that I love to make, but it calls for hangar steak, which I can never find anywhere. Fortunately, they had it here! I have never made the recipe with real hangar steak - always made it with an alternative steak, so I was very pleased with the result! The price was pretty reasonable for the quality of meat - $17/lb for the hangar.
They also have cooked food to go. I definitely will consider this option the next time I go!
