| - China Poblano is one of my favorite casual restaurants on the Strip. One plus is that for smaller groups or going solo, you usually won't need to wait long if at all for a table - and can always eat at the bar too. They also have a window for takeout orders.
First off, must get this out of the way: This is NOT a fusion restaurant - they have Chinese small bites / street food and Mexican small bites / street food, served independently. This is pretty clear even from the restaurant's website and I don't at all get why people expect differently and then rate this place poorly for it.
My go-to dishes are the tableside guac (strongly recommend tortillas), twenty vegetable fried rice, lamb pot stickers, and the silencio, cochinita, and lengua tacos. The chilaquiles, "gan pung ji" chicken, and dan dan mian are all solid dishes and worth ordering if you're a fan of them generally, but not particularly outstanding.
Based solely on the food, this place is a pretty easy 5* but the service is rough sometimes (the waiters/waitresses are all usually friendly enough, but are often inattentive / slow to get things done). Similarly, when the place is busy, the cooking stations can get really backed up and the dishes take forever to come out (on a recent trip, the wok station was backed up and several of our wok dishes like the fried rice took nearly an hour to be prepared).
